| F&B Manager •Takes part in establishing the Standard Operating Procedures for the operation in every Outlet. •Checks & supervises on a daily basis during the pre-opening time any works done in any location related to the Food & Beverage Department. •Controls the receiving of any operational equipment, either in Kitchens, Dining area or Bars. •Works on a daily basis according to Operating Procedures in matters of recruitments, training, norms and cultures of the Hotel. •Ensures recruitment is done as per requirements and needs, and starting dates are respected. •Supervises the training procedure and controls the follow up as per the Evaluation form. •Determines the working procedures under their specific aspects with all internal and external sectors of Hotel, which have direct relation with the Food & Beverage Department •Ensures all menus, plates presentations and recipes are approved, respected and updated. •Agrees menus and wine lists, both content and pricing with the Executive Chef and General Manager. •Monitors food costs results and discusses with Executive Chef. •Ensures that superb promotions are held in all outlets regularly to generate business. •Checks out duty rosters in allocated areas, ensures coverage and monitors timekeeping and absenteeism. •Holds weekly meeting with Food & Beverage Team. •Examines by Restaurant, guests profile in terms of consumption and Target Market. •Monitors the performance of the staff in the pre-opening time, operating hours and after closing. Proceeds eventually in adjustments between the need for employees and recruitments in terms of qualification. Recommends and advises for cross-training and inter- Outlet transfer of staff. •In stores best possible culture in his Department •Assists, advises in establishing the budget of his Department, and makes sure targets are met. •Ensures high standards of hygiene aspects and security are respected within the norms defined in his Department. •Insists on the norms of courteousness and communication between all staff as per the image of Hotel. •Be familiar with staff, fire and security procedures. •Has a thorough knowledge of all facilities and services offered for sale by the Hotel. •Maintains at all times the highest standard of appearance and social skills according to the Hotel’s policy. •Any other job assigned by the management as and when required | |
